When you watch the film, the character played by Tom Cruise starts not even knowing he had a brother. When he finds his autistic brother, Raymond, that brother is, to him, nothing more than a meal ticket. A critical point in the film is when Raymond mentions he was called "Rain-man" by someone. The Cruise character suddenly remembers he, as a very young child, called SOMEONE by that name. At this point the Cruise character begins to think of Raymond not as a meal ticket, but as his own flesh-and-blood. Although Raymond is too autistic to realize what is happening, the look on Cruise's face as his character starts thinking, "YOU were RAIN-MAN?" shows a major change in the plot direction.

Rainman is called 'Rainman' because when Charlie was younger he had an imaginary friend called Rainman and he eventually realised Rainman was real and his brother 'Raymond' was Rainman. He called him Rainman as he couldn't say Raymond as a child.
