They are not vegan; in fact, not all of them are vegetarians. The truth is that there are many religious practices in India, and vegetarianism is only one of them. As to why there is a higher occurrence of vegans and vegetarians among the Hindu people, it is because many hindus believe in reincarnation and that any animal could be a reincarnated relative. Rather than risk harming a reincarnated friend or relative, they avoid eating all meat. Others believe that harming an animal is bad Karma and they avoid eating any meat, so that they are not even indirectly harming animals. Hindus believe in freedom of religion, which includes freedom to practice your religion as you see fit. Not harming animals includes not harming each other, viz., as long as your beliefs don't interfere with my beliefs, we can get along together. As with any society, this is more the ideal than what actually occurs, but most Hindus try to follow these teachings.

Not all Hindus are vegan, most of them are non-vegan . Only some of the Brahmins are vegan.
