From what I've read (which isn't much) about air potatoes, they are usually grown because of their foliage, but the problem with them is that they literally "take over" and spread very quickly. As far as eating them is concerned, which is your question, one article said "they are bitter and some are potentially poisonous."

Planting potato seeds will sprout potatoes. However, in order to get edible potatoes, you will need to let the potato grow, then once you have a grown potato, you will have to cut off part of the potato and replant it.
