A fan assisted oven, called a convection oven, is quicker than a normal oven because it ensures that the heat is distributed more evenly throughout the oven's cavity. They are not hotter than normal ovens, as 350 F is 350 F however you look at it. They may take some time to get used to at first, since the cooking time for a recipe designed for a conventional oven would have to be slightly reduced.

Not necessarily, they merely circulate the heat for even cooking, but usually carry a consitently less temperature than a convential oven while decreasing the required cook time. They are most often considered 'Convection' ovens.

Should you leave the oven door slightly wedged open when drying out rusks?

I have dried the last 3 batches of rusks made in the thermofan oven and have not had the door open. The rusks dried perfectly and quickly. At the same time i had my warming drawer on the top level, which is quite hot, and placed a tray of undried rusks in there as well. When the thermofan rusks were dry, i had to turn the warming drawer rusks over as they were dry-ish on top and moist underneath....so they went into the thermofan oven as well.
