They are different types of animal fats I think. Bovine is beef and I think the ovine is pig. If you look at the ingredients on a non-vegetarian product, it will say gelatin (which is animal fat) and put bovine or ovine after it, to tell you which type of animal fat you are scoffing. If gelatin doesn't say bovine or ovine after it, then it usually means it is a vegetable fat, which is suitable for vegetarians.
