I cook my turkey's stuffed. I start by searing it for 15 minutes in a 450 oven, then baste w/ butter and tent w/ foil. The searing helps to seal in juices. Cook at 350 about 17 minutes per pound. I just leave it until the last hour or so, then un-tent, baste, and check the temp with a meat thermometer. Recover loosely with the foil. I baste about every 20 minutes until it is done, but for the last half hour, I remove the foil completely so the skin can get golden brown.
