The heat from the coils in the toaster cause a heating and drying effect. This causes moisture to leave the bread. When moisture leaves the bread due to heat, it becomes crisp and crumbly. TOAST!

Bread becomes toast when it is finished being toasted, and shows at least some sign of being heated. Toast can vary in its roughness and spreads (butter, among others) applied.

Bread becomes toast when sliced - usually about half an inch thick - and "toasted" by exposing both sides of the slice to high heat until it turns brown and crisp.
