Falafels can be made with navy beans, or any dried white bean, but, they don't impart the same flavor as the traditionally used dried garbanzo (chickpea) or fava bean.

The traditional topping is tahini, but, I love a good dill or mint yogurt dressing.

Made well, a good falafel is a thing of beauty.
