They can become rancid at some point, but they are not toxic. If the mix has not been wet it could be baked years past the expiration date and still be eaten.

No. Just be sure and use fresh mixers; ie. eggs, water, milk, veg oil or whatever it calls for. Most shelf life on non-perishables are 2-4 years past the print date.....
