I've been told not to, as it is still poisonous and will give your rabbit diarrhea.

No. Potatoes aren't part of a bunny's natural diet, and they're unhealthy. Green parts of the potato plant (including eyes in the peelings) are even poisonous. Don't give your rabbit potato at all.
