Bad idea. If you've eaten sushi, you'll have noticed that they never serve uncooked shrimp. Lobster and shrimp are very similar.
While clams and oysters are often eaten raw, even they have a risk...they are known to carry what is called the "Norwalk Virus".

It is hard for me to imagine why anyone would even attempt to eat something like under or un-cooked lobster or shrimp. The consistency would be like rubber. I don't even know if it's possible to chew into reasonable sizes to swallow...it would have to be cut up into small pieces and swallowed whole like a raw clam or oyster.
