Yes, olive leaves are edible, but first you need to know some things:

The olive leaf is extremely astringent (bitter). To chew a leaf straight off the tree is probably going to make you gag and spit it out, leaving your mouth feeling really dry and furry.

Always be sure you are using correctly identified olive tree leaves (olea europaea).

For non-specific internal medicine:

Drink the fresh preparation 1 to 3 times a day if you think this will help your condition. You may need to keep doing this for a few weeks so see improvement. You may also need to see a doctor for professional diagnosis.

Gather some fresh, clean olive leaves (about 5 leaves per dose), finely chop them with a kitchen knife, then grind this into a smooth paste using a mortar and pestle. Transfer the paste to a small drinking glass and add a squeeze of fresh lemon juice (adding another antioxidant supports the olive leaf's antioxidant activity). Stir well to combine. Add enough plain drinking water so you can swallow the mixture all in one hit (rather than sipping it, which could be unpleasant). If you still think this is still too unpleasant you can sweeten it with a teaspoon of honey, but I think it's not necessary.

You may experience some loose bowel movements or other symptoms while your body adjusts to the new medicine. If so reduce your dosage until you are accustomed to the new regime, then gradually increase to your target dosage - but always be alert to your body's reactions and if in doubt see a herbalist, naturopath, or openminded doctor.

Don't make extra quantities to store for another dose - always make a fresh dose each time, since it will become exposed to oxygen and its effectiveness may deteriorate. It's worth the effort. If you really must prepare extra, then place the surplus in an airtight snap-lock plastic bag, expel all air and seal it tightly, then place in the refigerator. Use it up within the day if possible. Freezing it may also be an option, but I don't know if this affects the stability of the active compounds.

Poultice for sores:

Use the same fresh MASH of leaves (not dry) as a poultice on mild skin infections, eg boils, pimples, scratches, tinea (athletes foot), warts.

Apply the paste to the affected area, cover with a piece of soft plastic or cling wrap with the same area as the paste (to keep it moist), then firmly and completely tape over with a sticky plaster (Bandaid) to secure it on the skin. Leave it on for several hours, and re-apply a fresh poultice every 3 to 6 hours if necessary. If after 24 hours the infection does not show signs of improvement, there might be more serious underlying conditions so please see a doctor for professional attention.

Always also check the surrrounding healthy skin to make sure you are not reacting badly to the poultice. If your skin does react, determine if it's the poultice or the gum of the sticky plaster that's causing the reaction.
