You can freeze oyster stew. I wouldn't freeze it with any potatoes if you add these to your stew. (I don't so....) In fact, Campbell's soup used to make a frozen oyster stew that you could just put straight into the pot. Unfortunately, it was discontinued. You may have some separation of the milk & the fats of the stew. (butter, milk fats, etc) but is quickly remedied with heat. Hope this helps!!
Yes you can freeze raw oysters. Freeze them completely immersed in liquid in a freezer bag or plastic container. Make sure all excess air is removed from the container. Do not store them for more than 3-4 months.
I would think so, since you can purchase commercially packaged fried oysters, but I would surmise they would get tough. I think it is better to freeze raw shucked oysters in their liquor, since that is widely accepted as safe and proper.
