Yes but not recommended. Even with the smallest grout lines, you should still use some kind of grout preferably unsandedgrout just match it with the color of the granite for a smooth continuous look.

No, you will need grout to prevent water from getting behind the tile. If you are really skilled, you can do it at 1/16, but that is a very precise task.
