Sometimes in older homes the ground wire was run outside the box and attached with a little clip on the face of the box. You might even see it wrapped around a screw in the back first. Other times, the old two-wire might be inside a conduit. In this case, the conduit was supplying the ground.

So, you can take a ground wire and attach it to the box using a self-tapping screw. This will provide your ground and you can then attach it to the receptacle.

If your system was supplied by a conduit just attaching a ground to the box may not do. Sometimes the conduit does not have continuity, meaning there is a break in the pipe fittings. About the only way to check this for you would be to check for power with a meter. You should have 220V between the insulated wires and 110V between each insulated wire and the ground.

If in any doubt, consult a qualified electrician.

AddendumIf you are fortunate enough to have conduit or old BX (steel sheathed wire) look into pulling new wire. If you only have 2 wires in the box, you may not be able to get a good neutral or ground connection to your appliance. You must have a good ground connection, and if you want this for a 220/110V appliance you need a good neutral connection. Without a good neutral you will burn up the 110V loads in the appliance. If you only have two wires, use them only if you absolutely cannot run something new. If you can run new wire, try to run four conductors instead of 3. This will allow you to install a more versatile 4 wire plug. For ovens and dryers old 3-wire plugs no longer meet the wiring codes for new work.

Sounds like a 220 volt stove. If you have a volt meter, checking the red to the black wire should show 220 volts AC. Checking the Black to the White should show 110 volts and the red to the white should show 110 volts.

The 4th wire in the stove is probably green which is a ground for safety. If you can track down your wiring back to your electrical panel, you will probably find that the white wire from the kitchen is connected to the ground bar. All the white wires and the bare wires in your electrical panel are connected to the same buss.

So, if this were all true and it were my house, I would change the the outlet in the house to a 4 prong recepticle. If you can't run a 4th wire for the ground, then on the house side of the recepticle I would put a short jumper wire from the white wire's screw to the ground screw. So what this does is allow voltage from the stove to return to ground along either the white or the green wire to the recepticle. Then by having the ground connected to the white, voltage is allowed to return to the electrical panel. Without having the green pin on the recepticle jumpered to the white wire there is a possible shock hazard because stray voltage on any metal panels that make up the portion of the stove that you touch can't return to ground and passes through whoever touches it and the kitchen sink at the same time.

Since electricity can be deadly, it wouldn't be a bad idea to get a second opinion.

If you look you will probably see a screw on the frame near the terminals that you can hook this to, the other end goes on the terminal with the white wire. Just changing the plug on the 220 - 240 Volt stove will not allow the stove to work on a 110 - 120 Volt socket outlet.

A 240 volt stove needs to be used only on a 240 volt circuit with wiring thick enough to carry the high current.

As you asked this question here you may not know anything about household AC power so the best advice anyone can give you is:

Call a licensed electrician to install a new 240 Volt power circuit for the new stove, including the right size new breakers on the main panel, the right size new wiring for the length of run to the kitchen and a new outlet to accept the plug from the stove.

Before you do any work yourself,

on electrical circuits, equipment or appliances,

always use a test meter to ensure the circuit is, in fact, de-energized.

From experience from working in an appliance store, I can say that no, there is not any kind of adapter for 3-4 wire applications on either stoves or dryers. You have to get the cord that works for your outlet, and wire it into the appliance. The Red and Black wires are both hot (They each carry 120v electricity). The white wire is a neutral, and the green wire is going to be your ground. You will connect the wires exactly as the old cable was connected, and the green ground wire will be bolted to your appliance. Most appliances have a place for the ground wire to go. You can either hard wire the new one or install an outlet for the plug. It the wiring was done correctly on the old one, you should have a Black, Red and either white or a bare wire. Red and Black are power and white or bare is ground. Ask for a Range Outlet, they are different than a Dryer Outlet. Turn the power of first of course.
