evaporated milk is canned but canned milk can be different types of milk, condensed or whole milk for example. usually when a recipe calls for canned milk , it means evaporated milk.
Regular evaporated milk is just regular milk that has water removed.
Evaporated filled milk is a blend skim milk, vegetable oil, stabilizers and vitamins that has water removed.

YES YOU CAN Evaporated milk is whole milk with 40% of the water evaporated out of it. So you can substitute it with regular milk. Another thing I would suggest is to add 1Tbsp of powdered plain creamer or dry milk to fortify it a little more. If using powdered milk add a little extra milk powder. You do not want to reduce the amount of liquid.
Better substitutes would be 1/2&1/2 or light cream.
Overall you can substitute milk for evaporated without doing much harm to the recipe.

When cooking with normal milk it will curdle. Always use evaporated milk in recipe when possible. Evaorated milk can be used instead of cream as it is lower in fat. however if substituting evaporated milk with regular milk, remember that evap milk is called evap milk for a reason. for 1 Cup of regular milk, you must only use 1/2 Cup of evap milk and 1/2 Cup of water. mix the 2 together and it should work in the recipe. i have never had a problem with this.

I have used soy as a substitute for regular milk, with success. You need to be careful as it bakes up a little differently and you may notice some 'cracks' in your pumpkin pie, but it stills tastes awesome. Low fat milk can be substituted for evaporated milk, but the final product will be noticeably less rich and lacking in flavor. A better substitute would be fat-free evaporated milk, also called evaporated skim milk.
