I've heard they can fall open because of gravity that's why mortitions sew them shut.

When a person dies, all of their muscles relax. If the eyes are open at the moment of death, they will usually stay that way. Also, if someone had their eyes closed at the moment of death, they will tend to open a short time later due to the relaxation of the muscles that open and close the eyes. This isn't always the case, but for the majority of people, the eyes will be open. Morticians do not sew the eyes shut. The old fashioned way was to take some cotton and place it under the eyelids. This kept them shut and gave them shape, as the eyes tend to sink back into the sockets after death. The current method of keeping the eyes closed is to use what are called eye caps. They have little grippers on one side, and are smooth on the other. The grippers keep the lids closed.

Soon after death, if someone died with their eyes open, the eyes will stay open. If the person died with their eyes closed, their eyes can creep open again as part of the body's last reactions. It falls into the same category as automatic bladder and/or bowel emptying upon death. It's the body going into a total relaxation mode.

If the question pertains to 'can a dead person's eyes be manipulated opened or closed' physically by another person, the answer is yes. It is of course, easiest, before rigormortis has set in.

The eyes are controlled by muscles. If the brain ceases to function while the eyes are open then the muscle often do not relax and the eyes remain open. In many cases the eyes are closed when brain death occurs.

It is true that the eyes do not fully close when a person dies. The eyelids come about halfway down, but do not fully cover the iris of the eye, so it can be unsettling to observe. Typically, medical staff will gently use their hand to close both eyes of the deceased person. The eyes are not difficult for a medical person to do; the eyelids just need a little help.

You can die with them open or closed. They'll pretty much stay wherever they were at the moment of death. Most people die with their eyes closed, as most people die normally while sleeping. It is perfectly normal to die with your eyes open, however.
