The grit is chosen to be suitable for the job in hand. It must be hard/abrasive enough to remove whatever is contaminating the surface, but soft enough not to damage the surface underneath. At one extreme you might use corundum or silicon carbide, at the other, products such as ground cork or walnut shell are used.
