In some movies he did, but like others in some movies he used stuntmen. I believe he did a high proportion himself though.
I'd have to add that once he became a major star, he was doubled in every movie. Some of his stunt doubles were: Jock Mahoney, Chuck Hayward, Cliff Lyons, Ted White, Fred Graham, Jim Burke, and his most frequent, Chuck Roberson. However, in the last scene of True Grit he insisted on doing the fence jump on his horse, Dollar. It was quite the highlight.

They do a few of their own stunts but major things are performed by stunt doubles.
