An Associate's degree is a 2-year degree. It is not as extensive as a Bachelor's degree and will not provide the same qualifications as a Bachelor's. Associate's degrees are usually used as a stepping stone towards a Bachelor's; in today's working world Associate's degrees are not really enough to be competitive (in fact, Bachelor's degrees are barely enough for some fields). A Bachelor's degree is a 4-year degree and is required or preferred for a lot of the more desirable job positions.

An applied science degree is composed of courses heavily concentrated in a particular field. It may include a few general education courses but most of the courses are concentrated on that certain area - for example, you can get an A.A.S. in food science and will take mostly culinary arts courses in addition to low-level English and Math.

A fine arts degree is composed of a broader spectrum of classes. With any arts degree (as opposed to any science degree), you are going to be expected to take a wide range of classes in a wide range of fields. For example, you may be expected to take introductory courses in English, Math, Humanities, History, Political Science, Psychology, Biological Science, Physical Science... you get the idea... and then you will also take upper-level courses focusing on the topic of your major (which for a BFA would be a visual or theatrical art of some kind).
