A basic vinaigrette is oil+acid (vinegars, citric juices, etc.) and sometimes mustard (to emulsify). Italian dressing is generally oil, vinegar, salt, pepper and Italian herbs and spices (oregano, basil, garlic, etc.). They are similar, but a vinaigrette tends to be simpler on the ingredients.

So-called "Greek salad" is made from lettuce, tomatoes, Kalamata olives, celery, cucumber, crumbled feta cheese and dill springs, and it is dressed with olive oil, red wine vinegar and fresh lemon juice.

Italians in Italy dress their lettuce salads quite simply, typically with extra-virgin olive oil and red wine vinegar, brought to the table in cruets so that each person can add the proportion of oil and vinegar to his liking.

In America, "Italian" dressing can include any number of additions, including garlic, onion, Parmesan cheese, etc. but this is not authentic.
