Pork is another white/dark meat animal. The center loins/rib (center cut chops and boneless centercut chops; baby back ribs also come from the center ribs) is all white meat. The blade end, shoulder (picnic), Boston Butt ("Pulled Pork" roast) and legs(fresh & smoked hams) is all dark meat.
