The main thing to remember with lemon extract, as with all extracts, is that you are dealing with a concentrate, hence use of the word extract. If a recipe calls for lemon juice, buy a lemon, if it calls for lemon flavoring or extract, buy a bottle. You can also NOT substitute lime juice or extract for lemon, lime is a much stronger flavor.
