For instance, in New Mexico they fold their tamales into squares and tie them up with at little bow torn from the corn husk. In Texas they fill the corn husk with masa in the way that the corn grows, up and down. In New Mexico a burrito is made on a flour tortilla no matter the filling. In Texas it is still a taco until it is fried, then it is a burrito.
