Do wooden cutting boards and spoons hold bacteria?

Bacteria and Wood Utensils

This is a commonly-held belief. Supposedly, sanitation of wooden spoons and cutting boards can be problematic because bacteria get into the pores of the wood. However, in practice, this is not a major difficulty if the spoon is washed and dried properly between uses.

Plastic or food grade metal aren't less prone to bacterial contamination. Hard wood is the most common recommendation now. They are easier to clean than soft wood.

Be careful that any utensil that has been in contact with raw meat does not come in contact with cooked or ready-to-eat food. This would be a source of cross-contamination. A common example of this: using a utensil to place meat on the grill and then using it to take the meat off the grill. The utensil was not exposed to the high heat that the food was.
