Yes, they do. The dilator muscles in the iris (colored structure) enlarge the central opening (pupil) to allow more light to reach the retina. When light levels rise, the opposing (sphinctor) muscles close the iris again to reduce the admitted light.

it is actually the other way around, but in the dark your eye get bigger to capture more light your eyes get smaller in the light, because if they were as open as they were when your eyes are when your in the dark it would hurt your eyes which is why it hurts when you turn the a bright light on suddenly while you are in a dark room it catches your eye while their adjusting.

Our eyes do dilate in the dark because when I was reading the New Jersey Driver's Manual because I'm getting my lisence soon, it said that our eyes dilate at night time.
