Pickling, while a scientific process, or at least one that can be explained scientifically, is an activity that is largely steeped in tradition. As with many traditions, there are things that are done, and things that are not done. The theory that canning pickles at the same time as menstruation causes spoilage is a wives tale. One told by old wives. Unfortunately, I doubt there has ever been a scientific examination of it. And, there may be some truth to it.
If this helps, my grandmother had seven daughters. She canned and set pickles every year from her early teens until the year before she died at 84. She was one of the best I've ever known (I truly miss her lime pickles--no one can duplicate them). In all the time she canned and pickled, she would not allow any female who was menstruating (daughters, nieces, granddaughters, neighbors, anyone) into her kitchen while she was pickling. She was adamant about this. The one time my mother allowed one of my sisters to help set pickles during my sister's period, half the batch of 50 jars clouded heavily and had to be disposed of.
YES, it does. Don't have the answers to it. But I know from experience, when over 50 quarts of zucchini unsealed and spoiled.
The ones my mother canned were fine, but when I came home and offered to help finish off the canning, I didn't think anything of it because it was my last day. Within 24 hours the jars started popping (unsealing). We were always told "no canning if it is that time". Your job then was to wash jars.
Yes
the cause of rice spoilage is leaving it unattended after a period of time
Canning is the process of applying heat to food that's sealed in a jar in order to destroy any microorganisms that can cause food spoilage.
Heating to over 160F will kill all major food spoilage bacteria. This is the process used in both pasteurization and food canning to preserve foods. If you do not heat to 160F enough bacteria will survive to cause the food to spoil in the can and cause food poisoning, this is a common issue with home canned food.
Most bacteria, which cause food spoilage, cannot tolerate the high salinity. The salt draws out moisture, causing them to die.

There are enzymes that speed up the chemical reaction components in food which leads to spoilage. Enzymes can be slowed down so that food spoilage doesn't occur as quickly by keeping food in cold temperatures.

No, sex during menstruation does not cause gonorrhea. Gonorrhea is an STD, it would be transmitted via sex.
