You can get decent, mid-quality baking pans from just about any store (Wilton or Baker's Secret). It is not necessary to invest a small fortune in muffin tins.
Usually the cost of baking trays makes little difference in how the muffins come out, however depth of the baking trays does matter - the deep ones result in far better shaped muffins. I got my baking trays from Tesco - they work just fine.

Stainless steel should be a better option for serving trays. There is no set rule unless there is a specific purpose though.

The enamel trays are used for heat-based cooking (convection, oven, broil) in the Advantium. You can either place food right on it to cook and brown, or place a glass baking dish on it. You can not use the enamel tray for microwaving.
