yes because if you dont, the pork would become too dry, even with bbq sauce.
Probably not, it depends on where the shortening comes from but I don't think a dessert would use lard-based shortening so I doubt it.
I'm pretty sure they used to be real pork skin. But now, they are probably a bunch of artificial flavoring and chemicals.
