Your music library is normally stored in a folder called iTunes Music which is placed in your Music folder. Deleting the iTunes software from your Applications folder will not affect your music library.

Also, once you delete something from your iTunes and it's on your iPod, then when you sync it again, the songs will be lost because you deleted the original file.
