The first sentence has the party happening on the Monday following the Saturday in question; the second sentence has the party happening on the Monday after the Monday following the Saturday.
Since this is obviously a source of much confusion, whenever this terminology comes up in communications, I am always clear to point out the actual number of days away from today. If today is Saturday, then the party this Monday is two days away, whereas the party next Monday is nine days away.
