Blanching spinach should not take more than 30 seconds. Make sure you have a sufficient quantity of water boiling, so there won't be too much of a drop in temperature when you put in he spinach. For proper blanching, you should cool down the spinach in an ice and water bath just after taking it out of the boiling water.
