Choose firm green tomatoes with some yellow or orange coloring. If you like them very tart, use green only tomatoes. After washing the tomatoes, slice them paper thin. If you have a mandolin slicer, it works perfectly to turn out even, thin slices.
- Step 2
Prepare the egg wash by beating 1 egg (or more if needed) with 1 tablespoon of water. Cover the tomato slices with the egg wash. Drain the tomato slices and dust on both sides with flour.
- Step 3
Heat the cooking oil (about 1" deep or more) in a skillet or fry pan and fry the tomatoes, not crowding them too close together. Brown on one side, then turn and brown on the other side. Your fried tomatoes should be very crispy. Drain on paper toweling and season to taste with salt.
