I don't know how 'fast-food' franchise hash browns are made, but I make mine by shredding cooled, pre-baked potatoes. I then melt butter with a little oil in a skillet and shape the potatoes into about a 4-inch diameter circle about 1/2 inch high. Let the potatoes brown completely on the first side BEFORE turning, then turn and brown on other side. ONLY turn them ONCE! Yum!
