Potatoes are stored in cold bunkers at around 40 to 45 degrees and low humidity, also they are kept in the dark to stop sprouting.In a refrigerator they will go bad if it is to cold and they are moist- it starts the growing process. Dark -cool-dry is the way to keep them for a long time.

Apparently, the ideal storage temperature for potatoes is 45°F to 50°F. If they are stored in the refrigerator, the starches convert to sugars which causes the potatoes to darken when cooked. See Related Links.

Especially when they are cubed, cooked thoroughly and used as a part of a stew or soup, potatoes aren't good candidates for a freezer. They become mushy and grainy and most people find them unpleasant.

About 60 years ago, when goat hunting in the mountains in winter, all of our food stocks were frozen. Because it was a very cold place.

For our potatoes, they could be happily frozen, (when knocked together, they sound just like stones), and if thawed from this condition, they become soggy and quickly blacken.

However, if they were quickly boiled from the frozen condition (lots of water to provide hot thermal mass) then they cooked OK. If one wanted roast spud, then boiling them first, then roasting the partly-cooked spud after, produced a very acceptable result. The freezing breaks the wet cells in the spud.

It won't ruin them but it will change the starch content enough to effect cooking. Potatoes should be stored in a cool dark and dry area like a cellar or pantry.
