Unless you want to read the code that powers the database programme, you don't want to convert it to a document.

You may, however, want to convert a database file to a document.

Since the database file contains not only the data you want to retrieve, but embedded codes, you may be able to save the database file into a .TXT format. Then you can open it using Windows Notepad -- if you're working on a Windows operating system. This will give you the contents of the database data file.
