Two general ideas. Test various types of material and measure the amount (or relative amount) of Frichtion. You could test wheels made from different materials: wood, plastic and rubber. It might be better to test pulling flat objects across a surface instead of using wheels. Second you could test different types of lubricants to see which one reduces Friction and/or Heat. You could build two rollers that can be turned by hand or pulley. Then apply different thinkgs like water, oil(different types) and see if the force required to turn the rollers is higher or lower.
