Bear in mind that not all products expire. Table salt, honey, dried grains and various other things do not expire. Anything that has a limited shelf life should have an expiration date marked on the package, but if it doesn't, you will just have to observe any visible or odorous sign of deterioration.
Some products dont have dates on them but codes that have to be figured out. I know that Hersey uses letters and numbers. For example 1H means it expires 2011 August. I wish the government would make them put actual dates on the product so we didnt have to do all this research.
If you can find a four digit code on the can, it is a Julian date. Since there are 365 days in a year, this number will be one of the 385 plus another one for the year. An example will be 2168. This number says that the product should expire on the 216th day of 2008. If there are no markings at all on the can, discard it as it probably is too old to use and may be a safety hazard.
Canned vegetables can last quite a long time if canned properly. Vegetables that have been canned can last for as many as 3-5 years if stored correctly.

No they don't have metal in them, they are called canned vegetables because they're vegetables placed in cans. The thing is it has a lot of perservatives in them (to keep it edible to eat).
