If you accidentally add too much cinnamon to your chili (some shakers just dump right out on you) here's what you can do to rescue your recipe:

  • First, if you haven't mixed in the cinnamon yet, gently spoon out any clumps.
  • Now, start by adding balsamic vinegar -- up to a tablespoon per quart of chili. The acidity will counteract the cinnamon nicely.
  • If that's not enough, add up to a tablespoon of lime juice -- you may need to repeat these steps depending how much cinnamon there is.
  • Add some water and tomato paste to further balance out the flavors; you will probably need more chili powder and other seasoning to taste.
  • Rejoice! Your chili's flavor has gone from overpowering to wonderful!

I had to literally take some chili out and replace it with tomato sauce more chili n spices and a little red wine helped too. Husband finally said, "I can eat it now."

You COULD put all ingredients through a colander and rinse off. Start the sauce part from scratch.
