Cream is a by-product of fresh, non-homogenized milk. In other words, when dairy farmers want whole milk for sale they gently heat 'raw' milk with the cream still in it, and stir it until the two products will no longer separate from one another. That is what the process of homogenization does. If farmers want cream, they separate the milk and cream in the 'raw' state, before the pasteurization process is applied. The end product is skim milk. Pasteurization, (named for Louis Pasteur), is when the milk is heated just enough to kill any bacteria which may be present. Various grades of milk, (1%, 2%, etc.), are made by removing only part of the cream content. The separated cream is saved and processed on its own. People can't just 'make' fresh cream. It takes a bovine, (cow) or other milk producing animal, to help.
