I live in an area where there are a lot of salts in the water. Perhaps that is one of the causes; I don't have the scientific knowledge to confirm that. My problem seemed worse if I used the Sani-Rinse or the Steam options so, obviously, the combo (salts, detergent, & extreme heat) had an adverse effect. I also sometimes wonder if there is enough water circulating to do a good job. What I do know is that when I switched from the powder detergent (Cascade) to the gel (Electrosol) & stuck with Hi-Temp Scrub, I got an all-around cleaner load, not just the cutlery. Perhaps different detergents contain different elements which react with the local water salts & really mess with our dishwashers. If that the case, I guess one has to experiment with various brands. Or possibly, the gel causes more turbidity & fools the sensor into thinking that the load is dirtier so it takes in more water; I don't know. All I know is that I saw quite an improvement when I switched. It's not perfect but much improved.

A note of caution: My sister who lives 600 miles away, in the country & had no water softener was using a gel & gummed up her dishwasher to the point where it wouldn't run. She has since gotten a water softener, cleaned up the dishwasher (had to take the thing apart, soak & scrub...took days) & all is well now. She has a 22 yr old Maytag & I envy the sparkle of her glasses & flatware.

Being the pessimist that I am, I do one load with the gel & one or two with the powder to make sure I don't gum things up.

I found that wiping with lemon juice (or any form of citric acid) on a cloth gets rid of that bluish colour on the flatware & the tub (stainless steel) without any scrubbing. I haven't tried just throwing some in the dishwasher or sink & soaking; that might work too.

Why are carbon-steel knives not used nowadays?

Stain resistant steel knives are easier to maintain for average knife user. Main complaints about carbon(non-stainless) steel knives is that they can leave a metallic taste in your mouth and are unsanitary. Also they rust and corrode.Carbon steel knives are widely used in Japan and Western world. They are not in mainstream kitchen cutlery, but high end knives are a different story. Besides, there are plenty of carbon steel knives outside of the kitchen cutlery, including folders and fixed blades.A knife will be as "unsanitary" as the owner allows it. Properly washing and drying knives after their use will prevent rust and corrosion.Stainless cutlery steel, despite its name also rusts and corrodes, just at a slower rate. Although, using dishwasher for stainless knives accelerates the rust considerably. That is one of the reasons why nowadays cutlery manufacturers slowly are replacing the term stainless with more conservative stain-resistant.High end Japanese kitchen cutlery is using carbon steel knives very widely. The most expensive and best knives, from the best makers are carbon steel knives, e.g. Aogami 1, Aogami 2, Aogami Super, Shirogami series, etc.

Can you drain your dishwasher through the floor?

You can, but depending on the model you may have problems with water siphoning out of the dishwasher during operation. Putting in a high loop may prevent this, and running the drain to a countertop air gap device before passing through the floor should certainly prevent it.
