Answer
1. You can use the polyganal lasoo tool to select around what you want to keep. You can also use the pen tool. If you want it done quickly, use the quick selection tool. I recommend the pen tool as i find it the best.
2. If you want cutting to be done simply and quickly and accurately, you can get a program called OnOne Mask Pro. This makes cutting images out almost too simply it is considered cheating. Keep in mind that you have to pay for Mask Pro though ;)

Method Overview:
Choose the Polygonal Lasso from the Tool Bar and select areas you want to DELETE, one large section at a time.
Why select what to delete? Because it is usually hard to select all the way around an entire object without making a mistake, requiring you to start selecting all over again -- which is VERY frustrating!).
A. FIRST, make a copy of your image
Either on a new layer or in a new file and do your changes on it. ALWAYS keep a copy of your original as a backup, just in case.
B. Select an outside corner piece of what you want to DELETE
Think of how a corner piece on a jigsaw puzzle looks. Always select what you want to DELETE, rather than what you want to keep, as mentioned above.
Here's how:
- Start at a point along the left-bottom edge of the object you want to keep (keep-object) and click your mouse.
- Continue clicking toward the right from point-to-point along the bottom edge of the keep-object.
- Click upward a few clicks as the keep-object edge curves up.
- Then click all the way over to the right margin, then down to the bottom right corner.
- Next click left along the bottom margin and last up to the point where you started.
- You will have to double-click at the starting point to 'close' the selection.
The outlined selection will appear as blinking dashed lines. It will look ROUGHLY like the lower-righthand corner piece of a jigsaw puzzle.

- Press the Delete Key on your keyboard to delete it entirely
C. Select and delete additional large sections outside your keep-object,
until you are left with just your keep-object.
