What is marsite?
Marcite is a "plaster" made from marble dust and white cement. It's put on top of the gunite and gives the pool a smooth finish and bright luster.
Why is Plaster applied to walls?
Plaster is usually applied onto Plasterboard to give it a smooth finish which can then be painted. There are other techniques, taping & jointing is one, though Plaster gives a better finish.

The finish plaster is normally white all the way through. It sounds like you are dealing with a pool that has been replastered by the method of putting a "brown coat"/"scratch coat" (the gray plaster you noted) over the original finish plaster surface, and a new finish coat of white plaster on top of that. The scratch coat more like a thin concrete than plaster (doesn't have the white marble dust in it) and is used to get a better bond to the old surface.

It is in simple terms a mixture of crushed marble and white cement mixed with water to form plaster which is then applied to the pool floor and walls with trowels to provide a smooth finish for the interior of the pool . Why do you plaster walls?
Before the advent of plaster board (sheetrock), plaster over wood lath was the most commonly used method for creating smooth interior wall surfaces. Is it acceptable to have hairline cracks in the plaster finish Diamond Bright of a new gunite pool or will it leak?
The hairline cracks in the Diamond Bright will not cause the pool to leak. You must have got plastered in hot weather and the plaster cured quickly. It is just cosmetic on the surface and not through the entire layer of plaster.
