There really is no substitute for eggs. I've tried, but it's never the same. The only thing I can think of is some whipped tofu. Possibly some sour cream or yoghurt. It's gonna change the taste no matter what. Let me know if you come up with anything. Oh yeah, there's powdered eggs, yech.
i like to use sour cream when makin my eggs. they come out so much fluffier. about a table spoon of sour cream and less if you want to throw in some milk too! :)
