To examine salt and sugar from a chemistry standpoint, both are crystals. However, salt and sugar are two different compounds with different molecular formulas.
The formula for salt is NaCl. NaCl is a electrolyte, which means when you put salt in water, it forms ions(atoms or molecules with a charge), a.k.a. Na+ and Cl-.
The formula for sugar is C6H12O6. Unlike salt, sugar is not an electrolyte. When you put sugar in water it will not form ions or conduct electricity.
