Unless the oatmeal has been cooked or has been damaged by water, the dry cereal is considered shelf stable - if properly stored - and does not go 'bad' from microbial growth. It can, however, picked up flavors during storage and can undergo chemical changes - rancidity and staling. You should be able to detect those by smell. Otherwise, you should be able to smell it while it is cooking. If it smells odd, it will taste odd.

No longer than it would take for the eggs to go bad. You can freeze it for as long as you want though, just wrap it up in an airtight plastic bag. Later you can slice it up and put it directly into the oven.
