When I was a boy , about eight, I lived in a housing project in a city. About once a week this old guy would come around the neighborhood in his horse and wagon and deliver large ice blocks (about 2 ft on a side). He would carry the blocks on his shoulder, holding it with pointed ice prongs, into the person's house and into their refrigerator. That's how some people kept things cold back then. Electric refrigerators were rare. That was about 1948. Anyway, to your question. The blocks of ice in his wagon were just stacked so as to make a giant block. And the giant block was covered with heavy canvas as insulation. Only the outside blocks had some exposure but they kept the blocks in the middle nice and cold. Even the exposed blocks would take a few days to melt when covered with the canvas. So that's how it was done. Also, many towns had ice making factories so the ice could be made locally and not have to be transported hundreds of miles.
