Initially any way - left to right or right to left with succeeding lines down below the previous. For a period it became fashionable to write left to right, and the following line right to left, then left to right etc. Convention finally settled on left to right, which is more natural for a right hander using a stylus or pen. Earlier, when inscribed in stone, that didn't matter, hence the variation.
