when i prepare cantaloupe i usually flatten one end so as to present a stable surface (just a little from the stem end). Then i will cut it in half. remove the seeds. Then i will get it into say 6ths or 8ths. so you have your traditional melon wedges. then you trim the rind (could call it skin) from the wedges. Then you cut it into whatever shape you would like.
