A specialized smell receptor is situated In the roof of the nasal canal, called Olfactory mucosa. the olfactory epithelium is innervated by the olfactory(1st cranial)nerve and some branches of the 5th nerve.

Olfactory epithelium contains three kinds of cells, namely olfactory receptor cells, supporting cells and basal cells.Olfactory receptor cells are sensory hair cells, sensitive to all kind of cells.Their axons terminally join the olfactory nerve. Supporting cells are mucus-secreting columnar cells. Basal cells are the stem cells from which new receptor cells are formed.

Olfaction, just like taste,is a chemical sense. The molecules of the odorous substances reach the nasal canal along with the inspired air. Here, they dissolve in the mucus secretion and then attach to the receptor cells. This stimulates the receptor cells and they generate olfactory impulses. Olfactory nerves transmit these impulses to the olfactory center in the temporal lobe of the cerebrum(known as the olfactory cortex)

Is it bad manners to smell the food?

For me, it's not. How else will you know if the food is fresh; going bad; or appreciate the taste. Remember wine taster smell (or more or less sniff) wine first before drinking cause the aroma enhances the eventual taste.Although some people may be offended if u smell their food. So my rule is: smell only your food, or when it's in the pot cooking or in their absence....

Why cant you smell cold food from far while you can smell hot food from far?

It is possible to smell food when it is cold. However, it is much easier to smell food when it is hot. The heat gives off thermal energy, which makes it simpler to smell. Because hot food is much simpler to smell, hotter food often tastes better than colder food. If a food smells good to someone, then it often has a better taste, too. Edit: If the cold food has spice on it, then yes! Or if it has garlic in it!
